88. Tuna Casserole


This is my twist to the traditional tuna casserole recipe and I don't bake it in the oven. After I stir it together I serve immediately I think it tastes much better.

You can substitute any noodles you have on hand, they don't have to be the frozen tortellini called for in this recipe. A yummy and easy recipe that we loved!

This is a super easy crockpot recipe. I love to cook whole roast chickens in the crock pot. I served this with rice, mashed potatoes or sauteed vegetables.

Big World Little Foodies

I just got back from bringing a birthday cake to my son's class. Wow, such compliments too bad I can't do that more often!

One kid wanted to know what was in it and asked with his pen and paper posed, can you give me the recipe? I said sure I'll get it to you. With his pen still posed and waiting the teacher had to tell him "she can't give it to you now though she'll have to do it later." He relaxed and finished eating.

I made a white chocolate pound cake recipe and it did turn out really well. "One kid said did you make that yourself, I wish my mom made cakes like that."

Yep, next time I need a boost of self confidence I'm bringing another cake to class forget about the birthdays.

An Easy Freezer Meal Week

This week I've deemed the eat out of the freezer week. I've enjoyed having dinner done and thought out already. I've taken dinner out the night before and added a vegetable or a salad.

The chicken pie I wrapped in a tin foil dish and then flash froze. Then I took it out of the dish and placed in a ziploc baggie or plastic container. This was the only meal I took from the freezer to the oven. I placed the tin foil wrapped pie in the same size oven dish and baked for 1 1/2 hours.

This is what we've had for dinner each day.
Monday- Chicken Enchiladas
Tuesday- Taco Salad with Chili. I just had to add shredded lettuce and salad dressing.
Wednesday- Chicken Pie
Thursday-Lentil Soup served with rolls that were in the freezer as well.
Friday- Cream of Potato Soup with Ham Loaf
Saturday- Beef Enchiladas


Now it is back to cooking and stocking up the freezer for another easy freezer meal week.

Now one might get a little scared about the idea of feeding kids cabbage rolls. However, in my recipe I also add chopped cabbage to the hamburger mixture so if kids take out the meat mixture in the cabbage leaf and leave the cabbage behind I'm okay with that. The meat inside the cabbage roll turns out moist and delicious having cooked wrapped in a cabbage leaf.

I love cream soups. I mentioned my kids often times prefer to have the chunky soup so I usually separate half of this recipe out for them and puree the rest for the cream soup version. Either way it is a easy healthy meal for kids.

I love this recipe because it is a "quick put something together meal." My kids love to have tortilla chips to dip the chicken and corn out and drink the broth.
